Tzatziki Sauce

Ingredients

  • 2 cups full or reduced-fat Greek yogurt
  • 1 English cucumber
  • 2-3 cloves of garlic, minced or grated
  • 2 tablespoons lemon juice (may also use white vinegar, white or red wine vinegar)
  • 2 tablespoons fresh dill, finely chopped (may add some finely chopped mint, as well
  • 2 tablespoons good quality extra-virgin olive oil
  • Salt and pepper to taste

Directions

  1. Use a box grater to finely grate the cucumber
  2. Lightly salt the cucumber and use cheese cloth to squeeze out excess water
  3. Stir together all ingredients and let sit for 5 minutes and adjust seasoning, if necessary
  4. Serve with pita, cut vegetables, falafel, zucchini fritters, gyro, souvlaki (see recipe featuring Harvest365 oregano)
